Your new favorite quiche

This is not your average, boring quiche. I’ve been making this quiche for years and i’m absolutely obsessed! It’s creamy and rich from all the evaporated milk and heavy cream, so you don’t have to worry about that rubbery consistency some quiches have. I also love this recipe because you can always make it your own. Clean out your fridge and use all your veggies and cheeses that are going to go bad. It makes the perfect breakfast or lunch with a beautiful side salad. Here is my basic quiche recipe but I’m also going to break down my goat cheese, tomato and spinach quiche which I love! Down the line I’ll also add my chipotle & bacon recipe too. Easily make this quiche with store bought pie crust or with my pie crust recipe which you can find on the site too!

Ingredients

6 organic eggs

½ cup evaporated milk

⅔ cup heavy cream

1 tsp. Salt

Fresh ground black pepper to your liking

½  tsp. Turmeric

Instructions

Preheat the oven to 400F

  1. In large mixing bowl add your eggs and beat until its nice and mixed. Now add your milk, evaporated milk, salt, pepper and turmeric. Whisk for a few minutes until all the ingredients come together.

  2. Add your choice of filling to the bottom of the crust as pictured below. Pour in your egg mixture getting all of it from the bowl using a spatula.

  3. Bake for 15min. at 400F. in the center rack of your oven. Remove from the oven after 15min. and tent your quiche with aluminum foil being VERY careful that it doesn't touch the top of the quiche. Place quiche back in the oven and bake at 350F. for 45 more minutes. You'll see it puff up and become a beautiful golden brown.

  4. Take your quiche out of the oven and let it sit and cool for about 30min. before eating. serve warm.

Tomato, spinach & cheese quiche

Ingredients

  • 3 garlic cloves, chopped

  • Extra virgen olive oil

  • 3 small tomatoes diced into 1in. cubes

  • 2-3 cups of organic spinach

  • 3 oz. goat cheese

  • 1/2 tsp. crushed red pepper

Instructions

  1. In a medium sauté pan add about 2 tbsp. olive oil and your tomatoes over medium heat. Add a little bit of salt and cook your tomatoes for about 6 min. constantly stirring until they have cooked down. Now add your garlic, stir and cook for about 1min. Add your spinach to this now and stir while cooking. You'll start to see it breakdown and as I like to call it "disappear" haha so don't be afraid to add A LOT of spinach. Add salt and pepper. After you see this all come together as pictured below, take it off the heat and let it cool for 10min.

  2. On step 2 of the quiche recipe above, add this filling to the bottom of your pie crust and then top that with dollops of your goat cheese. Now follow the rest of the steps from that recipe. Enjoy!
