Pollo con mojo al horno (mojo chicken)


  • 1/3 cup olive oil

  • 10 garlic cloves

  • 1/2 onion

  • Juice of 4 sour oranges

  • Juice of 1 lime

  • 1 tbsp. Salt

  • Pepper to taste

  • 1 1/2 tbsp. Dried oregano

  • 2 tsp. Cumin

  • 1/2 cup of cilantro

  • 6 chicken quarters


Place all your ingredients except the chicken in your blender and blend on high for 2-3 minutes.

Place your chicken quarters in a large mixing bowl with your mojo. Cover and refrigerate for 3-4hrs.or overnight ideally.

Preheat your oven to 350F.

Take your chicken and add it to a baking pan, skin side up & pour a cup of the mojo over the chicken. Cover with aluminum foil and bake for 30min. Uncover and bake for another 25-30 min. or until the chickens internal temp. registers at 165F. Broil 2 minutes at the end to get more of that golden color on top.

Serve over white rice with pico de gallo!
