Healthy Almond Butter Cookies

These cookies are my go to when I want to indulge but still want to be healthy. They’re super easy to make & you can make it in one mixing bowl because I hate washing dishes & you probably do too! I make sure to always have these ingredients in my pantry for whenever I’m having a craving.  If you want to make them healthier, just add less chocolate chips. Feeling fancy? Add coconut flakes to the top of the cookies..Yummm... brb have to go make a batch of these, enjoy guys!



Makes 6-7 cookies

Ingredients

  • 1/2 cup almond butter

  • 1/4 cup coconut palm sugar

  • 1/4 tsp. salt

  • 1 large egg

  • 2 tablespoons soy milk or your milk of choice

  • 2 tbsp. sweetened coconut flakes (optional)

  • 1tsp vanilla extract

  • 2 tbsp. coconut flour

  • 1/4 teaspoon baking soda

  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.

  2. In a medium bowl, combine all ingredients except the chocolate chips. Mix until ingredients are well combined. Next, fold in chocolate chips.

  3. Use a small cookie scoop or two spoons to drop cookie dough by the tablespoonful onto the baking sheet with parchment paper. The dough should be sticky. Fatten the tops of the cookies. Place the baking sheet in the middle rack of the oven & bake for 9 minutes until slightly golden brown on the edges. 

  4. Take them out of the oven & allow cookies to cool for 10-15 min. they'll firm up in that time.
