Mango key lime pie with a Galletica Maria crust
Galleta maria crust
1 ½ cup Galletica maria crumble
7 tbsp. Good quality butter
¼ cup granulated sugar
2 cans of leche condensada
1 ripe mango (purred in food processor)
1 cup of key lime juice
4 egg yolks
Using a food processor, grind up you galleticas maria to make a crumble.
In a mixing bowl, stir together your cracker crumble, melted butter and sugar until combined. The mix will be thick and sandy.
Press your crust into a 9 inch pie dish. I like to use a measuring cup to help press it down to make it tight and compact.
Pre-bake your crust at 350F. For 8-9 min.
In a mixing bowl, add your pie filling ingredients & mix until well combined.
Add your filling to your pie dish & bake at 350F. For 20 min. Let cool for 30 min. on a wire rack and refrigerate for an hour before eating. Top it off with some whipped cream & lime zest.
