If you know me, you know I am cumin OBSESSED. It's a problem. Everything I make has cumin in it. So I've gone as far as making a dressing / vinaigrette with it. This vinaigrette has the perfect kick and tang to add to your favorite greens. Below you can see I dressed some pea shoots from the local farmers market with it and added some organic tomatoes, cucumbers, labneh and olives for the perfect salad to accompany my veggie burger today! Make a big batch of this and store in the fridge for days. I also recommend trying this with a crunchy slaw using cabbage and apples. Yum!
1/2 cup extra virgin olive oil
1/3 cup red wine vinegar
2 tbsp. whole grain mustard
1 1/2 tsp. cumin
1 1/2 tbsp. honey
1 tsp. salt
Add all your ingredients to a big mason jar, cover with a lid and shake for a minute or two until it becomes creamy.
Add it to your favorite greens or store in the fridge up to 7 days until ready to use.
