Cinnamon roll pancakes
These pancakes are so good it should be illegal. It's a caloric bomb but who cares, its the weekend and no one is judging. This is what cheat day dreams are made of! Imagine all the flavors in a cinnamon roll but in the form of pancakes....Yea, its twisted and so wrong that it makes it so soooo right. Nothing beats waking up to this on a Sunday morning followed by a yummy food coma nap. No Sunday scaries here!!!! YUM!!

Makes 10-12 pancakes
Ingredients:
Pancake batter
2 cups all purpose
1/4 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
2 cups evaporated milk (or your choice of milk)
1/4 cup butter (melted & cooled)
2 teaspoons pure vanilla extract
1 large egg
Cinnamon swirl
1/4 cup unsalted butter, softened to room temperature.
1/4 cup packed light or dark brown sugar or granulated sugar
1 Tablespoon ground cinnamon
Icing
1 cup powdered sugar
2 tbsp. milk
1 tsp. vanilla extract
INSTRUCTIONS
Combine together the flour, sugar, baking powder and salt in a large-sized bowl. In another bowl mix together the milk, slightly cooled melted butter, vanilla and egg. Add your wet ingredients mix to your dry bowl and together until smooth but it should have a few lumps. The batter will be thick & creamy in consistency. If you find the batter too thick, add a couple tablespoons of milk into the batter at a time until reaching desired consistency.
Set the batter aside and allow to rest while you make the cinnamon sugar mix.
Combine the brown sugar, cinnamon & softened butter. Mix with a whisk or handheld mixer until evenly combined. Add mixture to a piping bag or google how to make a zip lock bag into a piping bag hack. Never fails!
Now in a mixing bowl whisk your all icing ingredients together. I like the icing to be a little thinner for these pancakes so add more milk until you get your desired consistency. Set this mix aside. Let’s make these pancakes!
Heat a nonstick pan (very important) or griddle over low-medium heat and melt 1 tbsp of butter and swirl around. Pour ¼ cup of batter onto the pan and spread out gently into a round shape with the back of your ladle or measuring cup. Immediately make a swirl on the pancake with the cinnamon sugar mix (see pic).
When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter. Now stack a few on a plate and top with your vanilla icing and a little bit of powdered sugar. Yep, you did it… Now, take a pic for your IG, tag me & enjoy because these are to die for!!!
