Carne con papa

Carne con papa, or beef stew with potatoes, is a classic Cuban dish that was a favorite of mine growing up. My mother passed down her recipe to me, and it's one that I treasure dearly. This hearty and comforting meal is a staple in Cuban cuisine. The dish combines tender chunks of beef with potatoes, onions, and a flavorful tomato-based sauce. It's a one-pot wonder that's easy to make and perfect for a quick weeknight meal. The dish has its roots in Spain, where stews like this one were common in rural areas. Today, it's a beloved Cuban comfort food that has been passed down through generations. Ingredients


2 Idaho potatoes (peeled and largely chopped)

1 green bell pepper (chopped)

1/2 a white onion (chopped)

1 red bell pepper (chopped)

4 garlic cloves (minced)

2 tbsp of olive oil

1.75 lbs of beef for stew, diced in small cubes

16 oz. tomato sauce

2 cups of water

1/2 cup of white cooking wine

1 tbsp of Sazon completa

1 packet of Sazon con achiote

1/2 tbsp of salt

2 bay leaves



Instructions


Make your sofrito: In your Dutch oven, add 2-3 tbsp. of olive oil, your bell peppers, onion, garlic and olive oil. Cook over medium heat for 5-7 min.constantly stirring until your onions are translucent.


Add in your beef and brown all sides of the meat by cooking and mixing into the sofrito for about 5 min.Now add your tomato sauce, water, cooking wine, Sazon and stir.


Add to the pot your potatoes, then drop the heat to medium-low and cover for 30-40 minutes until the meat is tender and potatoes are cooked through.
