Carne con papa

Carne con papa, or beef stew with potatoes, is a classic Cuban dish that was a favorite of mine growing up. My mother passed down her recipe to me, and it's one that I treasure dearly. This hearty and comforting meal is a staple in Cuban cuisine. The dish combines tender chunks of beef with potatoes, onions, and a flavorful tomato-based sauce. It's a one-pot wonder that's easy to make and perfect for a quick weeknight meal. The dish has its roots in Spain, where stews like this one were common in rural areas. Today, it's a beloved Cuban comfort food that has been passed down through generations.
