Shrimp salad
This salad is so so delicious and so easy to make! I love making it ahead of time and taking it to get-togethers or for when I have to host a lot of people at my house. Its always a crowd pleaser! It's healthy and will definitely leave you craving more. I made a lot for this recipe since it's for entertaining a lot of guests, feel free to cut the recipe in half.

Ingredients:
2 pounds of large shrimp (uncooked, peeled & deveined)
1/4 cup mayo + 2 tbsp.
A ton of black pepper
2 celery stalks, finely chopped
1/2 red onion, finely chopped
2 tbsp. capers roughly chopped
juice of 2 lemons
2 tsp. dijon mustard
chopped dill and parsley to your liking (I am dill obsessed so I put a lot)
Salt to your liking
Fill a large saucepan with water & 2 tbsp. of salt to boil. Add all your shrimp to the boiling water and cook for ONLY 3min. You want to make sure you don't overcook the shrimp. After 3 min. they turn nice and pink and thats your cue. Remove with a slotted spoon and add to bowl with ice cold water so that you stop them from cooking anymore.
In a different bowl whisk together the mayo, dijon mustard & lemon juice. Now add your cooked shrimp and all your other ingredients. Taste as you go. Refrigerate for an hour or two before eating so that all the flavors come together. Enjoy!
